AFRICAN DELICACIES ( OFE OWERRI).
INTRODDUCTIONS: Ofe owerri is the most popular soup in the esthern part of Nigeria in Africa particulaly in Imo state.
This is an expensive soup that is always prepared for the big men who can afford three square meals without complains as the materials are very expensive to buy which the poor masses can not afford to prepare because of its high costs.
before the soup is prepared,a lot of preparations and plans and considered.
Below are the materials for its preparations:
MATERIALS NEEDED FOR PREPARING OFE OWERRI (OWERRI SOUP):
1. Ede
2. Ugu (Punking vegetable leave).
3. Okporoko (Stock fish).
4. Azu (Dried fish)
5. Okazi (hard leave).
6. Anu (Meat)
7. Maggi
8. Ose (pepper).
9. Mmanu nri (Palm oil)
10. Nnu (Salt).
METHOD OF PREPARATIONS:
This is the step by step method of preparing ofe owerri in order to achieve a delicious meal. this include the followings viz:
1. Peal the cocoa yam and wash with clean water.
2. Put the cocoa yam in a clean cooking pot and boil about 10-15 minutes.
3. Bring it down from the fire
4. Remove the cocoa yam from the pot and pound it with a mortar and pestle.
5. Put the pounded cocoa yam in a clean bowel and cover.
6. Wash the punking and the hard leave differently and slice it in small pieces.
7. Wash the stock fish, the dried fish and the meat very well and boil for about 20-30 minutes
8. On the boiling water with meat, stock fish and the dry fish, add 2-3 spoonful of red oil
9. Add the pounded cocoa yam into the boiling water, and allow the cocoa yam to dissolve on its own on the water.
10. Add pepper, maggi and salt make it taste, and allow it to boil and mix together about 10-15 minutes,
11. Then add the vegetable punking, the hard leave, and allow to boil 2-5 minutes , and put off the fire.
12. Serve the meal with eighter eba (garri),or fufu (cassava).
